I don't have a traditional Christmas menu. I did remember to thaw the
lamb shoulder chops.

Christmas dinner will be broiled lamb chops,
boiled new potatoes with rosemary and steamed broccoli.
I had thought to (charcoal) grill the lamb but it's been raining for
days so that's not going to happen. Broiler it is!
I prepare the lamb very simply. Season with salt and pepper. Rub with
crushed garlic and rosemary, thyme, oregano. I think I'll throw in some
rubbed sage. (I'm using dried herbs.) Sprinkle with lemon juice and
brush lightly with oil. Let set for a bit, then broil the chops to
desired doneness.
I like lamb chops about medium-rare. This will give me a chance to test
the new digital thermometer I got (thanks, Santa!). I don't generally
use thermometers for things like this but these chops are thick enough
to try it out.
At any rate I know it will be a delicious meal. Merry Christmas nb and
