You can keep the hush puppies (BORING!), and the coleslaw (nasty), but
fried is indeed the thrilling way to prepare seafood and fish. Chicken
too, and pork chops, and some cheap cuts of beef (chicken fried steak).
This morning I made myself naked pan cooked short ribs. There was a pan my wife had used to brown stew meat, and had not deglazed, so I used that to
cook my short ribs (deeply discounted because tomorrow was their sell by
date). I cooked them rare, but they had lovely browned meat flavor picked
up from the pan.
