Sorry that my response is a bit late! Your menu is fabulous & more!
What -- No "texas toast" LOL!!! I agree, it's nasty stuff ~~

You have a perfect menu, and all of the items can be made well in
advance so the official day won't be overwhelming.

A green salad would be a wonderful and colorful 'foil' to the fruit
salad in the watermelon bowl. Although, if you want both coleslaw AND
potato salad, then a green salad is a bit over the top
