It always amazes me that Greeks and Middle Easterners manage to serve only
the gristle and cartilage from the lamb. What do they do with the actual
meat? My working theory is that they save it for themselves and laugh at
the rest of us.

Exceptions are so rare as to be almost nonexistent!
