I've never seen fresh rabbit, but then I was living in the suburbs.
Frozen was the closest I could get. I liked it well enough. I browned
it, deglazed the pan with a little light red wine, herbs, chopped
vegetables and maybe some chicken stock. This would have been around
1995 so I don't really remember exactly what I did. The rabbit was
tender, lean and tasty. I really haven't seen it since. I do know the
last time I looked for it I couldn't find it anymore.
