Has little to do with drying... from the moment sweet corn is picked
its sugar begins to convert to starch. Even if not eaten right away
it's best to cook sweet corn as close to harvest as possible, cooking
stops the conversion from sugar to starch... it's easy to reheat corn
although it's good eaten cold too.
