I don't follow any of that shit about safe zones and the like with anything
other than uncooked animal products.

Right now, I'm eating pork that I smoked two days ago, and was left at room
temp for ~36 hours before I put it in the oven at 170F this morning. I
never get sick, except for the time that I brought raw chicken on a
kayaking trip. Shit, I was scared to cook raw poultry at home for a few
weeks.

I also ate some cheese sauce that sat out for a while. The ingredients
were cheese and heavy cream, and in the combining, the temperatures were
high enough that I thought, *cooked*. I'd never serve that to my wife or
child, but they don't eat leftovers anyway.

I swear, which is funny because I'm areligious, and going to say that I
need to be more like John the Baptist (but certainly not like John Kuthe),
and less like Jesus, in that I need to stop eating and drinking so much.
