Good restaurants are a great source of at-home cooking ideas. If you
train your senses your tongue is probably as sensitive as a gas
chromatograph, so even the most subtle spice profile need not remain a
mystery.
It's a tragedy when an ill-prepared dish turns off a person to the same
food in the future. I've re-converted several people into liver eaters
by presenting well-prepared liver dishes. I have never had properly
prepared liver prepared by another person at home in my life, and only
rarely (and only at the fanciest eateries) have I had a proper liver
eating out. It's a shame, liver is not only one of the healthiest and
most nutritious meats, it is also sublime in flavor and texture.
