Default Triple Chocolate Brownie Cookies


We discovered these cookies in our search for relatively heart healthy
baked treats. They are relatively low in sugar... for cookies, and they
use relatively healthy canola oil instead of butter or shortening. There
is no white flour in them. The cocoa nibs can be found at health food
stores. They are expensive, but you only use 1/4 cup, so a $10 bag of
them lasts a long time (two years so far for me).

My wife served some to a fried of her's the other day and the friend
raved over them and had a hard time reconciling the sweet rich taste
with the relatively healthy recipe.



Triple Chocolate Brownie Cookies

¾ cup dark brown sugar
6 Tbsp Canola oil
2 Tbsp. honey
1 egg
2 tsp. Vanilla extract
½ cup cocoa powder
¾ cup whole wheat flour
¼ cup chocolate nibs
¾ cup chocolate chips (70%)
2 Tbsp. wheat germ
½ tsp. Baking soda

Preheat oven to 375 F. 190 C
Beat together brown sugar, oil, honey and vanilla until creamy, about 3
minutes.

Beat in cocoa powder…. *** .carefully…. low speed first, then high speed
about one minute

Stir together flour chocolate chips and baking soda then beat into wet
ingredients. Drop spoonfuls of batter onto prepared cookie sheet and
bake 8-10 minutes. Allow to cool slightly before transferring to a wire
rack.
