I'm sure that you all have read about this salmonella outbreak. What
I found interesting was that the article declared the chicken was safe

instant read thermometer says poultry should be cooked to 180F. The
government says 165F as well. I guess I need to get a new
thermometer. It is less than 10 years old.

180 for birds would be like eating a roofing shingle. Try to get splits to 175 in the thigh. Let the breastes fend for itself. If the unholy critters dont die at 175 they cant be killed by normal heat..so no use to worry about it.
