Well if the pig is an issue..beef works about as well if the fat content is kept up. At least 20%. Stuffed into the Beef Middle casing..kosher ingredients and stop by and let the Rabbi bless it should work. Will make you chunk rocks at the bland Polish stuff or anything that poses as baloney..lol. Smoke it or dont smoke it. Dont matter to me.

Bigwheel's Cowtown Baloney (Revised 04/24/09)

20 lbs pre-ground beef chuck (80% lean)
Morton's Tender Quick applied at 1.5 teaspoons per pound of meat or 1 tsp. for the less salt tolerant.)
5 T. White Pepper
6 T. Buttermilk Powder
2 T. Paprika
2 T. All spice
2 T. Nutmeg
2 T. Granulated Garlic
2 T. Onion Powder
1 T. MSG (Optional)
2 t. Coriander
2 t. Ground Cloves
3 t. Caynenne
2 cups beer and 2 cups water

Mix all the spices in the beer water and mix well in the meat. Run it through
on the fine plate and mix well again or till it gets fluffy. Stuff into Beef Middle Cases or medium hog guts for the non Jewish folks.

You can also stuff it into large bore plastic baloney cases but they cost about a buck a piece last time I checked. A person could just patty it up and fry it if desired.
