baked ricotta
All this talk of lasagne has me thinking about baked ricotta again.
I've never made it, but I think baked ricotta was the "lasagna" I used
to love before our favorite pizza palace owner retired and sold his
place.
Since I make my lasagna with a thick layer of ricotta, one of these
days I'm going to stop pretending and just go for it. I'd assemble it
the way I remember it being served at the restaurant: a big square of
baked ricotta with a lasagna noodle wrapped around the cut edges (how
they got it to stay put, I dunno), covered in a meaty red sauce.
