Well, I've never grilled a PBJ sandwich before but I do prefer them open
faced (one slice) toasted then spread with peanut butter immediately. It
melts on. Good by themselves or also good with jam on top....or with a thin
slice of swiss cheese softening on top. These are often a late-night snack
for me.
If you have a few salty Lay's potato chips handy, that makes it even better.
