Default meat-a-balls!

I'd been thinking about making meatballs that were slanted either
toward North Africa/Middle Eastern Mediterranean or maybe as far up as
Greece for the last week, so I used a half-half ground lamb (which
looked fatty to me) and 93% lean ground beef. When I looked in my
refrigerator, I discovered a bowl with a volume (not weight) of cooked
spinach that was only slightly less than the volume of each of the
meats, so I decided to experiment. I pulverized a small amount of
onion, some fresh garlic and half a small slice of the bread we had on
hand. Then I added and egg and blasted it again. I put everything
into my (okay, I'll say a brand name so you can visualize what beater
I'm using) Kitchenaid mixer bowl and used the flat beater to mix
everything. Why? Because I've been reading for years here in RFC
about how wonderfully it mixes meat.... and it did!! Oh, my
goodness... the cooked meatballs held together AND they were not heavy
by any stretch of the imagination.

I have seen the light!

I formed my meatballs with a #70 scooper, baked them on a lightly
oiled cookie sheet. I served them bathed in Trader Joe's Marinara
sauce (the one in a can) on a bed of cauliflower rice with a salad of
mixed greens etc on the side. I feel SO healthy (and I'm full). LOL
