Po'boys at casual po'boy shops around New Orleans are often topped with
your choice of any or all of ketchup, mayonnaise, and hot sauce. The
ketchup, mayo, and hot sauce on a po'boy come together into a sort of
rude cousin of remoulade sauce. I prefer just ketchup and hot sauce on
shrimp or oyster po'boys. Tartar sauce would be okay.
