lamb, I forget what else. They give you a little tong and as they
slice it off the skewer you grab it onto your plate. When you're
about to puke, you turn the dowel red-side up and the guachos back off
a bit. Then, you turn the green side up, and the gouchos reappear.
A good scarfing/dining experience.

Thanks a lot for the report. Never been there but heard about it. The servers wear gaucho pantaloomies seems like. Really ****es me off. Rational folks dont like it apparently.
