My butchers at Raley's cuts up tri tip sirloin
roasts into steaks for me. I tell them not to
cut off the extra fat. I can get the naturals
on sale for $5.99/lb. Cheap (natural) steaks.
(They then become what is called a Bottom Sirloin
Steak. Very tender too.)

The butchers always grin when I tell them NOT to
cut off the extra fat. We have a "bond".
