She makes it look much more difficult on her blog than it is. Wash and
boil small thin-skinned potatoes (I like to use small red new potatoes)
until fork-tender. Put them on a lightly oiled baking sheet. Smash
them with a fork or a potato masher. Brush lightly with olive oil,
minced garlic and sprinkle with dried herbs (rosemary, thyme). Place in
a 425F oven for about 20-25 minutes. They're very moist and tender
inside and nicely crispy outside.
