Default Gastrovac

There's a Gastrovac on eBay today.

I hadn't heard of this machine before I saw it
on eBay. Googling, I learned it is a vacuum
chamber with a heating function (described
as being like a hot plate). I wondered why
you'd want to pull a vacuum on food while
cooking it. The pages I found say it's to
drive a liquid into the food being cooked,
to suffuse it with the flavor of a sauce or
broth, sort of like a vacuum marinator combined
with a hot plate.

I'm not excited by that concept, or at least
not enough to bid. You can do the vacuum part
with a Tilia for much cheaper. The Gastrovac
is currently at $500 with 15 hours to go.
I'll be interested in seeing how much higher
it goes. I think it'll go north of $1000,
but probably not much higher. Maybe $1500.

The Tilia canisters are plastic and can't be
heated. Maybe somebody should come up with
a metal canister for the Tilia.
