Yes, raw spinach must be refrigerated and the lettuce storage trick
works to save it longest. Don't wash it unless you are going to use
it immediately and store it in the refer with the bag opened a little
so it gets some air to stall off bacteria growth. I pick the stems
off, too, unless I'm using fresh lettuce in a cooked dish. The stems
chopped to toss into soups, stews and casseroles add a quality flavor.
