I like (LOVE) beet greens more than beets too. In the olden
daze, when beets came with stems and the grocer cut them off
in the store, I'd ask them for the greens (which were free).
They couldn't believe that I actually ATE them. <sigh> Now
the secret is out. They are much, much, tastier than red
chard.
