I'm told by an Indian friend that much of what passes as "Indian" food
in US restaurants is actually Bangladeshi. You are quite correct in
there being many different regional Indian cuisine's, most of which you
won't find in any "Indian" restaurant in the US. You can find some
authentic stuff if you search for a vegetarian South Indian restaurant
and there seem to be more of those places in recent years.
