Campden on top
I crush C tabs with a pill crusher and typically dissolve the powder in some
wine before adding to the carboy. However, I've also sometimes simply
crushed the tabs and dumped in the empty carboy, then racked the wine in.
This results in some portion of the powder floating at the top of the wine
in the carboy, eventually dissolving. That doesn't look very appealing, but
it occurs to me that perhaps it better protects the surface from oxygen?

It is important to crush and then dissolve then in a little of the wine.
Stir in gently and Bulk age for atleast 6 months
