Beer rye bread from "Great Food Without Fuss".
2 cups self-rising flour
1 cup rye flour
1 TB sugar
3 TB caraway seeds
3/4 tsp baking powder
1/4 tsp baking soda
1 tsp salt
12 oz. beer (note: nowadays many beers are 11 oz.)
3 TB melted
Stir dry ingredients together, then the beer just until the mixture is
sticky. Spoon into buttered loaf pan (9x5) and bake at 350F for 30
minutes. Pour melted butter over the top and bake another 30 minutes
or until the loaf sounds hollow when tapped. Cool slightly, turn out
onto rack.
It's not real rye bread but it's delicious. -aem
