Grilled romaine salad with tomato and mozzarella cheese and anchovies and asian dressing
Real easy and very good.
Wash and pat dry baby romaine. Split it length wise. Drizzle with
olive oil, sprinkle with kosher salt, and grill to a light char. Chop
to large bite size, crush and add black pepper to taste.
Toss grape tomatoes in olive oil and grill till they just start to
split.
Cube fresh mozzarella.
Open a can of anchovies, add as many as you like.
Toss everything together.
Toast some sesame seeds in a dry skillet.
In a mason jar or bottle mix balsamic vinegar, wassabi paste and a few
drops of sesame oil, splash of soy sauce, and the toasted sesame
seeds.
Add some stone ground mustard.
Grate a small amount of frozen root ginger into the mix. Yes, I keep a
stick in the freezer. No need to even peal it.
Shake the hell out of it.
Pour over salad and serve.
Yep, no measurements. I just wing it every time that way I can adjust
to my liking.
