If you want more oak or tannin or both then add them. While some will argue
that it is better to adjust and add at the start, it does not hurt to adjust
at the end. I just added some oak to a wine that has been in bulk aging for
2 years. That may be stretching it but hey, it is my hobby and I will make
it the way I like it!
