Dear Nige,
Why do you not see what types of vines the locals (Spanish growers)
are growing, and then do some research on those varieties.
I think that all vine varieties could be trained on three wires as you
describe.
Also you would not have much of a problem with fungal diseases
(mildew), with any variety, down there.
