Default To mix, or not to mix, oily peanut butter

The oil is from the peanuts. If you keep skimming it off the top more
will just float to the surface. Eventually you'll end up with peanut
butter that's to dry to spread. Commercial brands of peanut butter
like Jif add shortening to the peanut butter to keep it from
separating.
