You're the first person I've ever heard suggest using grape skins to
add tannin to beer. Most brewers I've spoken to try to *avoid*
extracting tannins.

rec.crafts.winemaking is a group that is full of winemakers, and
rec.crafts.meadmaking is full of mead makers.
