Default White chicken chili

Do you mean that the chili is made with white meat chicken, or is the chili
literally "white," as in no tomatoes and no red chili papper? That's hard to
imagine.

These days I make turkey chili using ground turkey quite frequently. I
usually use either pink or black beans, although I used pigeon peas the
other day, and they were fine. I make my own chili powder from a variety of
dried chilis and other spices.
