Bacon Jam

Bacon Jam
2 lb smoked bacon
one whole head garlic crushed
2 lg onion sliced thin
1/2 cup brown sugar
1 T. Worchestershire
tabasco sauce to taste
1 c strong black coffee (expresso)
1 T. cocoa powder
1/2 c balsamic vinegar
1/4 c maple syrup
1 tsp. black pepper
1. Use scissors to cut bacon in 1 inch pieces. In a heavy bottomed
pan, fry bacon until browned and beginning to crisp. Remove bacon.
2. Fry onion and garlic in the bacon fat on medium heat until
translucent.
3. Add back the bacon and the rest of the ingredients. Simmer for 2
hours adding 1/4 cup water every 25-30 minutes if needed to keep from
sticking... and stir.
4. Cool for about 15 minutes and then place in food processor. Pulse
for 2 - 3 seconds so that you leave texture to the jam or you could
keep processing and make it smoother.
Store in the fridge.
