I make bison bourguignon in my crockpot, fairly regularly as my wife
demands it when I go away for longer than a day. Also bouilli, which is a
whole chicken slowly cooked with vegetables and a cup of broth. The
bouilli is a traditional French-Canadian summer dish.

I have a 5.25 litre crockpot which gets used about every two weeks. Last
thing I did was a pork roast with an apricot sauce.
