Why don't you consider renting a car? I believe the tiny Fiat Punto my wife
and I rented from Europcar on our last trip was only about $19 per day (L12,
and as you're a Brit, I'm assuming you can drive a manual). The best
wineries are out in the country, and though there are buses that will drop
you near some, I'd say it's far better to drive. The great little village of
Castellina in Chianti is one hour from Pisa by car (mostly autostrada), and
there are dozens of great wineries around there. The Chianti Consorzio gives
out a free map that shows the locations of wineries (even ones not in the
consorzio), and in most cases, you can just drop in. Even if you didn't
drive and could take a bus to Castellina for a day, I think you'd enjoy that
a great deal. Excellent local pizzaria there, and nice fine dining and
interesting shops.

I found Pisa itself to be overly touristy and worth only about one day; it's
a little gritty compared to the rest of Tuscany. You could rent the car only
for days on which you want to take side trips.
