This is obviously not my recipe. The link is above. The only changes I
made were to add a 4th clove of garlic...simply because I accidentally
pulled off four cloves. I also used boneless, skinless chicken breast (3
half breasts) and I thickened the sauce. I'm sure it would have been okay
but after 20 minutes of cooking, my husband complaining that he wanted his
food. I could have served it in bowls like a stew, but I had some special
Easter paper plates to serve it on. So I added a small amount of sweet rice
flour and cooked it until the sauce thickened. Next time I will just add
less broth and a lot more chicken. We had a lot of vegetables leftover.
I'm sure you could make this with less corn to lower the carbs. Or even
leave the corn out and just add more of the other vegetables. I also made
some boiled new potatoes...more of a garnish than anything because about
half of the bag was rotten. Angela grabbed a bag without really looking at
it and I didn't discover they were bad until we were checking out. I just
bought them anyway. I also had black olives on the side.
Angela loved it! I think it was one of the best meals I've ever made,
despite the fact that I usually dislike corn, zucchini and especially
chicken. The flavor was just divine! Husband said he didn't like it at
all. Angela scraped his plate. She said he ate most of the chicken and not
much else. I will say he does not usually eat his vegetables so no surprise
there.
