I've recommended tea-smoked duck before. It's certainly within the
range of an experienced cook and rewards the efffort by being
delicious and a little bit exotic. I once posted a recipe from Madame
Wong's cookbook, adapted for use with a chicken, but can't find it
today. No doubt you could find a bunch of recipes for it on the
