But there is a difference between stainless steels used in cutlery,
which are tempered, and tempered steel, which is tempered but is not the
same chemical breakdown as stainless. If a blade doesn't say stainless,
then the steel additives are different. In machining, tool steels do
not rust, but can be tempered. If you are cutting other steels or
brass, you do not want tool steels tempered. However, if you are using
a tool steel as a blade for something like a knife or peeler blade,
tempering it will give it a gentle bit of flexibility, which you do
want. One more however, is a housewife going to buy something to use in
preparing food made of something called tool steel? No, so calling it
tempered steel is more marketable. But there is a difference.
