I don't bother with "chili powder", either store bought or homemade
these days. I just have a variety of dried or ground chiles, plus other
spices, that I use in making chili or whatever. Also canned chipoltes
in adobo. I made some chip dip with some of the latter, sour cream, and
shredded cheddar. It was . . . interesting. I'm not sure it was
balanced quite right, but it wasn't bad.
