Default Do you remove the lymphatic tissue from the back portion of chickenleg quarters before cooking?

I do. They are icky. You know what I mean?

Right where the pelvis meets the vertebrae there are those red things
that have a brainy looking texture. I also get as much of them as I
can out of the body cavity when cooking a whole bird. Lower left in
picture.

I didn't suggest this as an RFC poll because I think that Cathy has a
bit more taste than to put this up on her site.
