Drag a sharp knife over the stalk starting a half inch or so from the
end. If it's tough to cut, abandon the attempt, move up another half
inch or so and try again. When you get to the tender part, the knife
will pass through the stalk easily.

We've brought in heaps of asparagus from the back yard. You don't
want the little thin ones anyway--they're always woody.
