Mom taught me to make mayo many moons ago and I have made it (with lemon
or lime instead of vinegar) and it really is very good, better than the
commercial actually, but we don't go thru enough anymore to make it
worth the effort, and the commercial seems to keep longer.
Mom's recipe:
2 cups vegetable oil
1 tsp salt
1 tsp white pepper
1 tsp mustard powder
1 raw egg
juice from 1 whole small lemon or lime
She'd put all the ingredients in the blender except for 1 1/2 cups of
the oil then start it up. She told me to make sure the oil was COLD so
kept it in the 'frige. Let it blend for a good 30 seconds or so, then
gradually add the remaining 1 1/2 cups of oil by drizzling slowly into
the blender and making sure it incorporated into the mix as I went.
I've made it several times and it always worked, but I'm more likely to
switch to the wand blender next time I get ambitious. ;-)
