I used to make "Texas Tommy's" all the time when I was a kid. I just
made the bacon by cooking it in a fry pan flat until it was crispy, then
I would cook the hot dog in the bacon fat, then I would put the hot dog
on a bun, put the bacon on top of the hot dog, then lay a slice of
cheese on top of that and pop it in the toaster oven for a few seconds
to allow the cheese to melt. The bacon turned out crispy every time.
