Among the bigger name brands such as Wustof, Global, Henckel's
Forschner, Shun, etc, you will probably do well. None of the big guys
suck, basically. The trickiest part is finding the blade heft, size
and handle that best fits your hand and is most comfortable to use for
the tasks you undertake in the kitchen.

It isn't always easy to go the store and experiement, though. If
you've friends who cook, try to practice with a few different ones and
see what feels good to you, then stick to the name brands that provide
warranty.
