I love kidney beans as salad. Beans, finely sliced onion or shallot,
garlic, fresh ground pepper, a smidge salt and a good vinegar and oil
dressing. Let stand for about an hour before serving. I like to add
chopped tomatoes to that also. But I really like kidney beans.
