PICO DE GALLO
1 pound ripe tomatoes, diced
1/2 cup chopped red onion
1 cup fresh cilantro
4 large fresh jalapenos, finely chopped with seeds
1/3 cup ice Water
Juice of 1 lime
Salt and pepper to taste
Mix all vegetables and herbs with the ice water, add salt and lime juice
to taste. Don't stir too much!
This is more of a crisp relish than a salsa and goes along great with just
about anything! Can be refrigerated for several days.
