If you don't put a crust on it, isn't it creamed chicken
or even chicken-ala-king with vegetables?

I've always used James Beard's recipe for chicken pie which
begins with making his chicken fricassee. If I don't use a crust, I
often top it with baking powder biscuits.

It's YOUR kitchen and YOUR chicken, do whatever you please.
