cocconut pudding
i was bored and wanted to experiment...so these amounts are appromimate,
so i put 2 cups milk on the stovetop in a sauce pan with a fourth cup of
heavy cream.
then i whisked in liquid splenda and vanillia for flavor..and then whisked
in a teaspoon guar gum and a 1/4th cup of cocconut flour to thicken.
one it started to bubble i removed it fromn stove and drizzled it slowly
while whisking into 4 egg yolks then return it back to stove to bring to a
boil to be sure everything was cooked and would set up..i then stirred in a
half cup of unsweetend cocconut flakes and chilled in the fridge 8 hours.
i thin spponed into a bowl and topped whith whipped cream..was delicious!
next time im going to try adding bannana flavoring since i cant eat
bannnana.
now i know how to make the base pudding i can see making chocolate pudding
and many other flavors since the methods the same..even making cream pies
and using the low carb crust i made using carbaloes and cream cheese....yum!
