Depends on the dish but any onion would probably work. But if I couldn't
find leeks or didn't like the price I'd probably substitute a bunch of green
onions... shallot might work too, or any of the sweets (vidallia?). For
potato leek soup I almost always use green onions... never yet has anyone
noticed a difference.
