IMHO Vanilla extract is too easy to make at home. There is no reason to
purchase Mexican VE that does, indeed, have Coumarin in it. I've heard
tho' that the danger is over-rated but I'm not chancing it.

Take a bottle of Vodka or everclear, place the vanilla beans in it and
let it sit for about 6 months. How long will it take you to use up
750mls. of Vanilla extract for pity sakes?

That'll last me about 10 years.
