I wash and chop them skin on, drizzle a baking sheet or thick foil with
olive oil, coat the potatoes with it, then add salt, pepper, and
chopped/bruised rosemary, bake at 400 until beautiful, flipping as needed.
It also works in a foil packet but they don't get as crispy.
