ALL food stylists use such tricks. They aren't unique to Bon
Appetit. Ice cream is usually mashed potatoes - does it matter,
really? What they show you is what things can look like if the recipe
is followed. The stylists' tricks are needed because of the length of
the photo shoot, and the heat from the lights.
